Jollof rice is undeniably the most popular dish in West Africa, celebrated for its rich, flavorful, and unique taste. The preparation and ingredients can vary significantly, making each recipe special. In Nigeria, where I come from, Jollof rice has become a staple at occasions and gatherings. It’s not just a meal; it’s a beloved favorite among many. At parties, people eagerly anticipate the “party Jollof,” renowned for its distinctive flavor—something you often don’t replicate at home.
As Christmas approaches, Jollof rice finds its way to our festive tables, and this year, I’m excited to prepare my own version for my friends. Spending Christmas away from family offers me a chance to explore my culinary skills in the kitchen. Over the years, I’ve made countless batches of Jollof rice, from party versions for gatherings to personal servings. However, I’ve never had the chance to cook it for a Christmas celebration. Usually, with a large family, the kitchen buzzes with activity, leaving me with limited roles, often just slicing vegetables or peeling seasoning sachets.
This Christmas, I’ll be taking charge of the entire cooking process, and I can’t wait. I’ve always dreamed of sharing my love through food, and this is my opportunity to create a Christmas Jollof that my friends will savor.
The Planning Process
Three days before heading to the market, I decided to try something different. I revisited my cooking journal, where I jot down new recipes I want to explore. I stumbled upon a recipe from my aunt, who lives in the Eastern part of Nigeria. During a visit three years ago, I had the privilege of tasting her Jollof rice, which had a unique flavor that intrigued me. Although she had finished cooking by the time I arrived, I asked her for the recipe, and she graciously agreed to teach me.
This Christmas seems like the perfect opportunity to apply what I learned. I prepared my shopping list, researching ingredient prices to avoid overspending, particularly since prices tend to rise during the holiday season. After confirming the prices with my regular market vendors, I set my budget and scheduled my market trip.
Why Choose Jollof Rice?
In Nigeria, many festive dishes like fried rice, pounded yam, egusi soup, and amala are prepared during the Christmas celebration. However, Jollof rice stands out as the dish of the season. Not only is it easier to prepare, but it also boasts high nutritional value, especially when served with a variety of side dishes.
Complementing Jollof Rice
Jollof rice is typically accompanied by delicious side dishes, adding to its appeal. Common accompaniments include colorful salads made from cabbage, carrots, cucumbers, and sweet corn, as well as proteins like grilled, fried, or roasted chicken, turkey, beef, or goat meat. These sides not only enhance the flavor but also contribute to the meal’s nutritional value, making it a cultural phenomenon cherished across Nigeria.
This Christmas, I look forward to sharing my Jollof rice, infused with love and new flavors, with friends. After all, Christmas is about spreading joy, and what better way to do that than through a delicious and heartfelt meal?
General Tips for Jollof rice
Here are tips you should look out for when preparing your jollof rice:
1. Use the right type of rice: Long-grain rice is the preferred choice for Jollof Rice, as it holds its shape well and doesn’t become mushy.
2. Tomato paste is Key: Tomato paste adds depth and richness to the dish. Use a high-quality tomato paste for the best results.
3. Don’t overcook the rice: Jollof Rice should be cooked until it’s tender but still slightly firm. Overcooking can make the rice mushy and unappetizing.
4. Add a touch of spice: A pinch of cayenne pepper or red pepper flakes can add a nice kick to the dish.
Plus: Making Vegetable Salad
For the salad, making use of fresh vegetables is really important to preserve the nutritional value.
Ingredients
- 1 large fresh cabbage
- 7 large fresh carrot
- Green peas
- 1 large cucumber
- 2 medium scoop of mayonnaise
Instructions
- Rinse and slice or grate cabbage
- Rinse and slice or grate carrots
- Slice cucumber
- Add all the vegetable into a bowl and mix together
- Add your mayonnaise and mix together
Fried Chicken or Beef
Ingredients
- 1 kg of chicken or beef
- 1 cup of water
- 1 large onions, sliced
- ½ cloves of garlic minced
- ½ cloves of ginger, grated
- 3 seasoning cubes
- 2 cup of vegetable oil
Instructions
- Rinse beef properly with warm water
- Add beef into your pot or saucepan
- Add sliced onions, chopped garlic and grated ginger
- Add seasoning cubes
- Add water and boil over medium heat till beef becomes tender
- Put off heat and put your frying pot over medium heat
- Add vegetable oil and allow to heat for 2 minute
- Add beef 5 at a time to allow proper frying
- Fry till it becomes golden brown in colour
- Put inside a metal sieve to drain the oil.

Classic Christmas Jollof Rice

- 4 cup of uncooked long-grain rice
- 2 cups of water
- 1 cup of vegetable oil
- 4 large onions, chopped
- 1 teaspoon of curry
- 1 teaspoon of thyme
- 1 cloves of garlic, minced
- 1 teaspoon of grated ginger
- 1/2 teaspoon of spices
- 1/2 teaspoon of salt
- 8 cubes of seasoning cubes
- 2 bay leaves
- 2 tomatoes, chopped
- 2 tablespoons of tomato paste
- 4 scotch bonnet, pounded
- 2 cayenne pepper, pounded
- Vegetables i.e carrot, sweet corn , green peas and green beans.
Instructions
1. Heat the oil in a large saucepan over medium heat.
- Add the onion, garlic, and ginger. Cook until the onion is translucent.
- Add the tomato paste and stir, then fry for two minutes..
- Add the bay leaves, tomatoes,cayenne pepper and scotch bonnet and . Stir well to combine.
- Add seasoning cubes, curry, thyme and spices
- Add the stock water then more water to the saucepan and bring to a boil.
- Add the well washed rice and salt and leave it to boil
- Reduce the heat to low, cover the saucepan with a tight-fitting lid, and simmer for 20-25 minutes.
- Add sliced carrot, green peas,sweet corn, and green beans and stir
- Cover the saucepan with a tight fitting lead for 4 minutes and put off the heat.
- Open slightly to cool off
- Serve with vegetable salad and Beef/Chicken as desired
