- - 1 medium sized coconut
- - Chicken
- - Salt
- - chicken seasoning cubes
- - Garlic
- - Ginger
- - Curry
- - Thyme
- - Spring onions
- - 3 Bell pepper
- - 5 Scotch bonnet pepper
Instructions
– Steam your washed chicken with blended garlic,ginger and onions,chicken seasoning cubes,salt,curry and thyme for 7 minutes. – Add a little water to the steamed chicken and allow to cook for another 10 minutes. – Blend your pepper mix[bell pepper,scotch bonnet pepper,and onions] – Chop your coconut into small pieces and blend with lukewarm water till it’s very smooth,then proceed to sieve the coconut to get the coconut milk. – Fry the chicken till golden brown. – Fry your pepper mix for a few minutes till it’s properly fried. – Proceed to adding your coconut milk and chicken stock,cover your pot and allow it to simmer for 3 minutes. – Now we proceed to washing our rice till the water is neat,then we add the neatly washed rice to the pot,stir a little and add your seasoning if necessary, now cover the pot and low cook on low medium heat. – Add spring onions when the meal is ready for color. – Now your delicious coconut rice is ready.
