This homemade pancake recipe has been a cherished recipe in my family’s kitchen since I was a child—and for good reason. Made with ingredients I usually have on hand, these pancakes have the right fluffy texture and certainly perfect for brunch & grab-and-go breakfast–sure to get your day off to a good start🫶🏾. Today, I’ll show you how to make fluffy, handmade pancakes and you’ll get to enjoy their delicious taste (should you choose to make it yourself). 🙂

I’m also on a quest and I do encourage embracing fresh fruits so much in our meals. Fresh fruits like mangoes, pineapples, and oranges and other available fruits depending on its season.
Including these in your breakfast diet adds natural sweetness and provides a rich source of vitamins and antioxidants, boosting your immunity and energy levels. To moms getting kids ready for school in the morning can be a hectic task. Amidst the rush, it’s crucial not to compromise on their nutrition. A healthy and nutritious breakfast can set the tone for a productive day of learning.
First Time Pancakes
The first time I ever had pancakes was when I was 10. It was on a Saturday morning, I remember the sun reflecting on our kitchen window brightly shining on the fridge. After taking my bath, my mom told me she’s making pancakes. I had never seen or tasted it before, but I was eager to see it and eat it. I pictured a full cake😂
Being small at the time, I had limited experience in the kitchen and limited movement. Touching any glass kitchenware was a huge no from my mom. I was extremely clumsy and always in a hurry. Almost twice in a row in a week, I must have broken something.
There was a certain time my sister had to take the fall when I broke my mom’s favorite purple flask, because I had exceeded my limit in breaking kitchenware. So, my mom was always cautious of me being in the kitchen, she would always give me the simple and non-fragile items to hold or carry. The plastics were very much perfect for me. Perfect Plastics🤭

She was patient to show me the process and allow me to break the eggs as well. I was eager to do everything and more than she asked me to. She allowed my sister and I to take turns in mixing the batter for our pancake. My mom’s recipe was unique – she added onions and peppers to her pancake batter. She gathered all the ingredients: flour, baking powder, salt, milk, eggs, and sugar to make the batter.
After a much anticipated and endless wait, with our mouths watering, the pancakes were finally ready. They tasted so good that I begged my mom to make them more often, especially so I could take them to school for lunch. More of the excitement was because I wanted to share the pancakes with my classmates in school and brag about my mom’s pancakes.
The next time I made pancakes again was when I was 19, I had mixed all my ingredients together except eggs (I totally forgot). I had fried the entire batter and eaten about 5 wraps. Then, I remembered I skipped the eggs and quite interestingly it didn’t affect the taste of my pancakes. So regardless of pancakes with eggs or pancakes without eggs, you’ll still get your fluffy and light pancake if you follow all the right procedures.
What are pancakes?🥞
A pancake, also known as a hotcake, griddle cake is a flat cake, often thin and round, prepared from a starch-based batter that may contain eggs, milk, and butter, and then cooked on a hot surface such as a griddle or frying pan. It is a type of batter bread. Pancakes may be served at any time of the day or year with a variety of toppings or fillings, but they have developed associations with particular times and toppings in different regions.
In North America, they are typically considered a breakfast food and serve a similar function to waffles. In Britain and the Commonwealth, they are associated with Shrove Tuesday, commonly known as “Pancake Day”, when, historically, perishable ingredients had to be used up before the fasting period of Lent.
They’re delicious as is, but also easy to customize with your favorite add-ins: chocolate chips, banana, oatmeal or whole wheat, buttermilk, fresh or frozen blueberries. Yummy toppings – such as lemon, sugar, butter, chocolate spread, peanut butter, whipped cream, marshmallows, fruit, honey, syrup, healthy dollops of yogurt or whatever you fancy! Eat together with milkshake or a cup of tea.

1. Check the freshness of your baking powder.
2. Whisk your dry ingredients to avoid big lumps.
3. Resist the over-mix.
4. Rest the batter.
5. Use a big skillet or, better yet, a griddle.
6. Wipe out the pan between batches.

Something to Know: Shrove Tuesday facts
1) Shrove Tuesday others know it as “Pancake day” is a Christian festival celebrated in many countries across the globe. It falls on the Tuesday before the beginning of Lent – a period of around six weeks leading up to Easter. During Lent, Christians give up luxuries to remember when Jesus went into the desert for 40 days to fast and pray.
2) The exact date of Shrove Tuesday changes from year to year. But one thing stays the same — it’s always 47 days before Easter Sunday. And yes, you guessed it, it’s always on a Tuesday!
3) The name comes from the old word ‘shriving’, which means to listen to someone’s sins and forgive them. In Anglo-Saxon England, Christians would go to church on Shrove Tuesday to confess their sins and clean their soul. In other words, they would be ‘shriven’.
4) In the United Kingdom, Ireland, Australia and Canada, Shrove Tuesday has another name… Pancake Day! Traditionally during Lent, Christians would give up rich, tasty foods such as butter, eggs, sugar and fat (some Christians continue to do so, in fact). Shrove Tuesday was the last chance to eat them – and what better way to do so than with a delicious pancake!
5) Today, people continue to whisk up these yummy treats on Shrove Tuesday — and they add all kinds of tasty toppings, too, such as fruit, honey, chocolate and ice cream!
