Being an early morning riser, I end up having to figure out what to do before the rest of the world wakes up. I go for a walk or sometimes sit quietly or read something in a park. The world looks so much more beautiful with the fresh morning air and the birds chirping. It’s Springtime now and the trees are in in full bloom which makes for a pleasant sight after a long working night.
Sometimes, eateries are closed- at least the ones which serve the kind of food which I like. It’s not a bad thing- as it’s always tempting to have some unhealthy foods otherwise. 🙂
Meeting Jabba the Hutt
As I walk along- I see a nice flowering plant with a yellow hibiscus which reminded me that one of my friend’s had mentioned that hibiscus plants help to attract bee-eater birds. That made me happy and I picked up a plant for the balcony of the apartment where I am staying.
Ran a few errands and said hello to a few dogs out for walks in the park- this is a guilty pleasure as I love dogs but can’t keep one. 🙂
Slices of days adrift
It’s turning out to be a pretty hot Spring Day and now I’ve built up a healthy appetite. I return to rummage through the fridge. Always handy to have a few simple ingredients for a quick meal- a breakfast, brunch or anytime snack. So, I usually stock up on simple ingredients such as eggs, bread (prefer brown bread), some butter, cooking oil, salt, pepper, tomatoes, cheese and a bottle of mixed herbs. This time, I had a bunch of basil leaves, a few slices of pineapple and a bottle of olives in the fridge as well- which made it yummier. But again- depends on what you find in the local supermarket.
Hangry- is that a thing?
I have a hard time waiting till afternoon since I am trying to follow an intermediate fasting routine. But I manage to hang in there with a couple of cups of black coffee and then sit down near the pretty balcony to enjoy my simple meal.
No. Some wise soul told me- Hunger is not an Emergency!
As I ate, I remembered the Morning Salad that I made while travelling with my husband to Granada on a holiday in 2016. We gorged on the Serrano ham there with some quick olives, artichoke preserves thrown in with cherry tomatoes and salad leaves. Nothing very complicated. It’s just what you find in the local supermarket and what is your budget now. 🙂
Body Context Missing Incidentally
This simple breakfast that I rustled up costed me about Rs 100. I dedicate it to Amazon ‘SHOP 24’ delivery service which has lost my pressure cooker in transit. I’m calling it the Amazonian Bunny Buncha. 😉

Amazonian Bunny Buncha

- 2 Eggs
- 2 Slices of Brown Bread
- 1 tsp of Olive oil
- 1 small blob of butter
- 4 pieces of White Button Mushrooms, sliced
- 2 Slices of Pineapple cut into smaller pieces
- 1 tbsp of grated Mozarella Cheese
- 1 medium tomato, sliced
- 4 olives halved
- A sprinkling of salt and pepper
- Fresh basil sprigs, if desired
Instructions
- Heat a wok with the oil and butter and add the sliced Mushrooms. Season with salt and pepper
- Beat the two eggs with some salt and pepper. Pour over the Mushrooms- let it cook for some time.
- Add the Pineapple pieces and sprinkle the grated cheeseÂ
- Add the two slices of bread on top of this in the middle and let it cook for 2 mins
- Arrange slices of tomato, olives and fresh basil on top.Â
- When cooked (takes about 2-3 mins)- flip over the bread and let the other side cook as well.
- Flip it over and fold the egg over the bread slices.Â
- Take out, cut into 2-3 slices/portions
- To serve, Use some of the additional pieces left over from the cutting with some fresh basil
