Fried Chicken Salad- Easter Egg Hunt

This post is about the Chicken or Egg story captured in a small Fried Chicken Salad. We love chicken and stories. But sometimes it becomes a difficult choice. When that happens do you have a voice?

Have you ever gone on an Easter Egg Hunt? Or been gifted easter egg chocolates- some of them shaped like bunnies? (I haven’t- just asking). Can you avoid cakes and chocolates when you have kids at home? Hmmm….

If I say, I love Egg stew and Egg Sandwiches and Egg Salads and Scrambled Eggs and French Toasts and Eggs Benedict and Poached Eggs and Fried Eggs and Eggs in all forms. It’s a very confusing decision- what to make for breakfast or brunch. Sometimes somebody is snoring way past lunch. And sometimes people throw eggs in their drinks, their hair and also on other’s faces. If this is your story of multiple accusations in life with disgraces, read on. If it’s not, and you have enjoyed a rather more well-regulated unloving environment- you may wish to skip straight to the recipe.

I’ve come, let’s Scroll before we stroll

Sometimes it maybe just amusing to read this to chuckle over how unfortunate other measly beings could have been. Of course, you deserve the best in life to fight for others or simply to fight for yourself first. And some told me- I fight like a girl. Is that a bad thing?

We are the same?

So, we are left with a difficult choice. What do you make for dinner instead of breakfast if you wake up really late on Easter Sunday? Others may have already had a meal or two by then. So, it might be a lighter dinner.

Sometimes that makes sense before drinks and desserts follow. When you go out at night, it’s always better not to go on a completely empty stomach.

Quick Fried Chicken Salad

So, here’s my recipe for a simple easy Fried Chicken Salad.

Why fried? Why not baked? How about air fried? How about Outdoor Barbeques?

Everything works. But I have a cast iron pan- which is great for frying and more importantly, I rejoice in my ability to use it again. I look forward to using it for other dishes as well later in the year. I bought this cast iron pan when I went out on New Year’s Day- 1st Jan 2025 to celebrate surviving to see through another year.

I met a friend to pass on some Gajar or Carrot Halwa. She had just returned from a family trip near Annapurna mountains. And seemed very tired. She suggested a new dosa place to try some dosa. It was closer to another dear friend’s house, but she was really tired as well. She had another appointment later in the afternoon with her family and friends.

So, I had a breakfast by myself. I felt a bit overwhelmed- by the crowd and eating alone in a crowded restaurant bustling with people. Many were out with their family and friends. But when the food arrived and I tried it, I didn’t feel as sorry for myself. Instead, I felt a bit sad about others in my life who couldn’t be a part of that meal. We could have shared it and enjoyed each other’s company but most of them are in distant places.

I did like the idli, vada, ghee masala dosa and the filter coffee there. Didn’t get to try the upma. So, I share my recommendation for those visiting Bengaluru. It’s not a place that I had tried or heard of before.

What about the Cast Iron Pan

Well, after I had my meal, I was feeling a bit drowsy. I thought I would check out a nearby shop for some fruits to bring back home for dessert. Turned out the fruits/desserts weren’t great there- mostly Christmas sale items being cleared off.

But I ended up finding a claypot and cast-iron pan instead. Both great deals and things which I had in mind for my kitchen.

I missed them from earlier- I did have to leave a lot behind when I migrated. But let’s not repeat that whole story again, right? They all came free of cost (apparently), my labour of love was also free of cost (apparently), my recipe book that I left behind for my disappearing husband and my well-trained helper there was also free of cost (so conveniently for him).

So, this post goes out with an affirmation that it was actually NOT free of cost. I bore the cost of his lies and mistakes in life. And I still carry that burden of his share of the half-truths and untruths in life.

So, this is perhaps a very expensive cast iron pan. Expensive in more ways than one. You may wish to check out the Organic Mandya | Healthy and Organic Food For Better Tomorrow where I found it. I have used it and did 1 trial run of the claypot as well.

Keeping it simple

Easy there! It’s too hot right now where I live for heavy meat sweats. So, we will keep the recipe simple.

Using the pan more and keeping it well oiled (seasoned) is important. I am able to lift certain weights which I wasn’t able to earlier.

That’s a good progress, don’t you think? Something worth celebrating on Easter Sunday?

Let’s not get toooooo happy about it. But every little blessing counts. It helps to remember the people who helped you along the way and were a part of the inner or outer circle. Whether they know it or not. Sometimes I myself don’t know who has actually helped behind the scenes silently.

With my grateful thanks and best wishes for a happy start to another not so easy year at school, college, home or workplace. I say not so easy, because that’s what I see around me.

The recipe is simple though- it’s all about the 2-ingredient marinade of Shiro Miso Paste and Gochujang/Gochugaru paste. You may have your own favorite marinade. For those who have it better in life, do share.

The light is shining on you today- it maybe darker tomorrow.

Footnote

I want to visit Tirupati temple again and donate my hair for a good cause. Hair in food is a no-no for some people, and I wonder if this donation of knowledge is ok. My blog/website is not worth a billion dollars and I don’t know enough to dig deeper into the differences, yet. I have even less to show as my lifetime of earnings. Less than a few thousand dollars perhaps- I never evaluated. But I have a question. Does anybody wish to listen? Nobody?

Past, present, future memory rejig- nothing lasts forever

Ok.

We will try something lighter– just as an example. Why are we importing elders and exporting younger talent. Any guesses? I don’t know for sure- perhaps something to do with the age skew in our population right now. Exporting and importing objects vs people are different subjects that needs closer re-examination.

Psst! I don’t think this is a lighter topic. Somehow, have a feeling the temple visit, and donation maybe linked to this question. We may wish to delve into some questions about food perhaps. And perhaps Political Science is not your strong suit. (Hmmmm.)

Fried Chicken Salad

Print This
Serves: 2 Prep Time: 15mins Cooking Time: 15mins

Ingredients

  • 300-400g boneless chicken thighs
  • Marinade
  • 1 tbsp Shiro Miso Paste
  • 1 tbsp of Gochugaru/ Gochujang Paste
  • 1 tsp of ghee for frying
  • Salad ingredients (of your choice)
  • Dressing
  • 1 tbsp of the drippings after frying
  • 1/2 lemon juice
  • 1 tbsp approx of Balsamic vinegar
  • 1 pod of garlic
  • Garnish
  • Mint leaves
  • Basil seeds

Instructions

  1. Marinate the chicken thighs- overnight preferable
  2. Heat the cast iron pan and put 1 tsp of ghee
  3. Put the chicken thighs on the pan and fry on high flame and then on low flame
  4. Turn over to the other side and repeat
  5. Take out the chicken pieces and let it cool for 1-2 mins
  6. Cut into smaller pieces/strips if you prefer
  7. Make the salad dressing- drizzle it on the salad greens
  8. Serve the chicken hot with the salad and garnish on top

Notes

1. Other meats can be used instead of chicken. Beef or Pork steaks can be used as well 2. Gochugaru/Gochujang paste has different spice levels. This is a milder one. But do check for your own tolerance/spice levels.
